Nectarine Cake
Simple nectarine cake - with its sweet nectarines, buttery sponge and cinnamon sugar topping, this summer cake will go down a treat.

- 100 g butter salted
- ½ cup sugar granulated
- 2 eggs
- 1 teaspoon vanilla essence
- 1 cup flour all-purpose
- 1 teaspoon baking powder
- 3-4 nectarines
Topping
- 2 tablespoons sugar granulated
- 1 teaspoon cinnamon
Preheat oven to 180°C / 350°F fan bake. Prepare a 22cm / 9-inch cake pan by spraying with cooking spray or line with baking paper.
In a large bowl cream butter and sugar together
Add eggs one at a time whisking in between each one
Add vanilla and whisk until all incorporated
Next add the flour and baking powder
Fold in dry ingredients until just mixed together – DO NOT OVER MIX
Add cake batter to your prepare cake pan and arrange sliced nectarines on top of cake mix
