Add the hot water and mix with a spoon until it comes together
Lightly knead dough into a ball, but do not over mix it as you want your dough to be soft and springy.
Cover dough and let rest for at least 10minutes.
Divide dough into 12 portions and roll into balls.

Roll out each ball into a circle. Add extra flour to prevent your tortilla sticking.
Cook your tortillas in a hot, ungreased pan. Fry on each side for about 40-60 seconds. Flip the tortillas once they has bubbled up and have golden brown spots.
Once cooked place your tortilla in a clean tea towel to keep warm and soft until you are ready to eat.
