Spiced fruit English muffins

Ingredients

  • 70 grams Butter softened
  • 2 Tablespoons sugar
  • 1 teaspoon salt
  • 1 egg
  • 3 cups flour
  • 2 teaspoons yeast
  • 2 teaspoons cinnamon
  • 1 teaspoon mixed spices
  • 1 cup sultanas
  • 1 ¼ cups milk lukewarm

Instructions

  • Bread machine - Place all ingredients into your bread machine and set the dough setting.
  • Stand mixer - Place all ingredients in your bowl and using the dough attachment, turn the mixer on to the lowest speed for the first minute, once the dough has come together turn up to medium and let mix for 8 minutes.
  • Cover bowl and let rest for 1 hour.
  • By hand – Add all ingredient to a larger bowl and mix with a wooden spoon, once it gets too hard to mix place your dough onto the bench and knead by hand for around 10 -12 minute.
  • Cover bowl and let rest for 1 hour.
  • When your dough has rest for an hour and doubled in size, sprinkle your bench with a little flour and turn out dough, roll out your dough until it is about 1 ½ cm think.
  • With a round cookie cutter or cup, chop out your English muffins.
  • Place on a board and cover and leave to rise for 30–45 minutes.
  • Heat a frying pan or grill plate and cook the English muffins for 1 minute on each side or until golden brown
  • Transfer the English muffins to an over tray and bake for 15 minutes in a pre-heated 170°c oven.
  • Split in half and toast to serve.

Notes

If you do not have any instant dry yeast you can use Active dry yeast you just need to activate it first by add it in to your warm milk and let it sit for 5 minutes.
When cooking the English muffins in a frying pan or grill do not use any butter or oil to cook them in, just a clean dry pan.
