Instructions
Heat sugar in a heavy base saucepan. Once sugar starts to melt stir until sugar has all dissolves.
When sugar has all dissolved let it lightly boil away until it turns an amber colour.
Take off heat and add cream a little at a time. It will start to bubble up as you add the cream.
Add butter and stir until butter is all melted.
Leave to cool for a few minutes before using.
