Summer Nectarine Cake
A sweet summer nectarine cake.
Sweet nectarines, buttery sponge and cinnamon sugar topping. This cake will go down a treat on those late summer afternoons.
Ideal for afternoon tea or an evening dessert, served with yoghurt or cream.

With this summer cake, you can swap out the nectarines for other fruit you may have an abundance of, like plums, apricots or peaches.
Nectarine Cake
Ingredients
- 100g butter
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 3-4 nectarines
Topping
- 2 tablespoons sugar
- 1 teaspoon cinnamon
Method
- Preheat oven to 180°C / 350°F fan bake.
- Prepare a 22cm / 9-inch cake pan by spraying with cooking spray or line with baking paper.
- Cream butter and sugar together.
- Add eggs one at a time whisking in between each one.
- Add vanilla and whisk until all incorporated
- Add in flour and baking powder. Fold all together until there is no white flour showing. – DO NOT OVER MIX
Topping
- Mix together sugar and cinnamon and sprinkle over nectarines on top of cake.
- Bake for 30 – 35 minutes until golden on top and the cake springs back to the touch.

Nectarine Cake
Simple nectarine cake – with its sweet nectarines, buttery sponge and cinnamon sugar topping, this summer cake will go down a treat.
Ingredients
- 100 g butter salted
- ½ cup sugar granulated
- 2 eggs
- 1 teaspoon vanilla essence
- 1 cup flour all-purpose
- 1 teaspoon baking powder
- 3-4 nectarines
Topping
- 2 tablespoons sugar granulated
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 180°C / 350°F fan bake. Prepare a 22cm / 9-inch cake pan by spraying with cooking spray or line with baking paper.
- In a large bowl cream butter and sugar together
- Add eggs one at a time whisking in between each one
- Add vanilla and whisk until all incorporated
- Next add the flour and baking powder
- Fold in dry ingredients until just mixed together – DO NOT OVER MIX
- Add cake batter to your prepare cake pan and arrange sliced nectarines on top of cake mix
Topping
- Mix together sugar and cinnamon and sprinkle over nectarines on top of cake
- Bake for 30 – 35 minutes until golden on top and cake spring back
