Chocolate Peppermint Cookies

These homemade chocolate peppermint cookies will tick all the boxes, with their chocolate base and soft creamy peppermint filling, then finished with chocolate on top, they taste amazing.

What makes these cookies stand out from the rest is there creamy peppermint filling which is made with fresh peppermint leaves.

Peppermint and chocolate just go together and with their fresh peppermint flavour, they are just the thing for an after-dinner treat.

Chocolate cookie dough

Beat butter and sugar together, then add in your egg and vanilla and beat until creamy.

Next add in your flour, cocoa and baking powder and mix with a spatula until it comes together.

Sprinkle some flour on to your work surface and roll out your chocolate cookie dough.

I roll out the dough to 5mm thick and then cut out with a 5cm / 2inch round cookie cutter. At that size I got 36 cookies out of this dough.

Place on a baking tray lined with parchment paper and bake for 10 minutes in a pre-heated 170.c/ 340.F oven

Peppermint filling

To a bowl add soften butter, finely chopped peppermint and ½ your icing sugar beat until well mixed, about 2 minutes.

Next add the other ½ of you icing sugar along with the cream and green food colouring. The green food colouring is optional.

Continue to beat until light and silky. You may need to add another ¼ cup of icing sugar if the filling is to soft.

Add your peppermint filling to a piping bag and pip on to your completely cooled chocolate cookies, then place cookies into the fridge to chill for 30 minutes before dipping in or drizzling on melted chocolate.

Ingredients

  • 100 g salted butter
  • ½ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • 3 tablespoons cocoa powder

Peppermint filling

  • 70 g butter
  • 1 ¼ c icing sugar
  • 2 tablespoons fresh peppermint
  • 2 Tablespoons cream or milk
  • 1-2 drop green food colour optional
  • Chocolate topping
  • 150 g dark chocolate chip melted
