Healthy blueberry and banana muffins jam-packed with fruit.
This is my go-to muffins recipe, my kids absolutely love them, they go great for an afternoon snack and are perfect for the school lunch box.
Filled with the sweet goodness of blueberries and bananas this muffin recipe is easy and fast to put together. The sweetness from the ripe banana helps to sweeten these muffins and along with the help of a little bit of honey, means you don’t need to add sugar.
I use frozen blueberries for this recipe and there is no need to defrost them. You can also use fresh berries but I never have any in the house as they get gobbled up before I have a chance to use them.
Optional: you can throw in some white chocolate buttons for a sweet hit and this bring these muffins to another level.
The best thing about these muffins are they are super easy to make and can be frozen and defrosted later without tasting terrible.
Substitutes that can be used in this muffin recipe
- I use frozen berries, but you can use fresh.
- I use salted butter for all my baking. If you are using unsalted make sure you add a pinch of salt to your recipe.
- You can use cooking oil instead of butter in this recipe, but I prefer butter.
- Over-ripe bananas work best as they are sweeter.
- The honey can be swapped for maple syrup or sugar.

Blueberry and banana muffins
Ingredients
- 1 ripe banana 1 large or 2 small
- 60 g butter
- 1 egg
- ½ cup milk
- 3 tablespoons honey
- 1 teaspoon vanilla
- 1 ½ cups flour
- 2 teaspoons baking powder
- 1 cup blueberries frozen or fresh
- Optional ½ cup white chocolate
Instructions
- Preheat your oven to 180.c /350f
- In a large bowl whisk together the mashed banana, melted butter, egg, milk, vanilla and honey.
- Add in the flour, baking powder and blueberries and gently fold altogether. Do not over mix or your muffin will be tough.
- Spoon into prepared muffin tins and bake for 20 minutes
- Makes 12 muffins
